The protein source can be any meat free alternative or chicken/ beef strips. I used 'the vegetarian butcher' vegan chicken pieces.

For the serving shown (filling split across two tortillas with cooking oil and mayonnaise):

Ingredients
1-2 corn tortillas
100g raw chicken breast or meat free chicken
1 small bell pepper, sliced 2 handfuls lettuce leaves
80g sweetcorn
1-2 tbsp fajita seasoning
Sour cream, avocado, mayo, or salsa to top
Olive oil for cooking
Squeeze of lime
Method
Chop peppers and fry in one pan.
In a small bowl coat the chicken strips in fajita seasoning then fry until cooked through.
Cook sweetcorn for 2-3 mins as instructed.
Optional - warm your tortilla.
Chop lettuce into strips then add to tortillas along with the chicken, corn and bell pepper.
Top with avocado/ sour cream/ mayo or salsa and add a dash of lime juice.
Remember: you can modify recipes to make them better suit your nutrition needs and/ or calorie budget. For example, swap the cooking oil for a spray to save calories, increase the chicken serving for more protein, do 2 tortillas instead of 1 for more carbohydrate.
