Easy Ramen noodle bowl

The protein source can be chicken, bacon or a meat free version of either, like I used here.



Serves 1

22g protein

25g carb

23g fat

9g fibre


Ingredients


1 packet ramen noodles

300ml pre-made chicken/ vegetable stock or a stock cube and water

1 spring onion, sliced

1 clove garlic, grated

Thumb of ginger, grated

100g raw chicken cut into strips or meat free chicken

1/2 tsp Chinese five spice

1 tbsp light soy sauce

1 tsp sugar

2 handfuls of spinach or asian greens, chopped

Sesame oil for cooking


Method

  1. In a saucepan or casserole pot add the five spice, ginger, garlic, soy sauce, sugar and stock. Bring to gentle simmer then leave on to cook.

  2. In a frying pan cook the chicken or meat free chicken strips in a small amount of sesame oil until golden and cooked through.

  3. In a third saucepan bring water to the boil and cook noodle packet as instructed, usually 2-3 minutes whilst stirring. Drain but save the noodle water.

  4. Pour the ramen liquid through a strainer into your serving bowl then add the noodles, chicken, spinach and garnish with onions.

  5. Add extra noodle water if needed to increase the liquid in the bowl to your preference.
